Ingredients

  • 1/4 cup (2 fl oz / 60 ml) freshly squeezed blood orange juice

  • 1 tablespoon (15 ml) pomegranate juice

  • 1 tablespoon (15 ml) elderflower cordial

  • 1 1/2 teaspoons (7 ml) fresh lemon juice

  • 1/3 cup + 1 tablespoon (3 fl oz / 90 ml) sparkling water

  • 1 dash aromatic bitters (non-alcoholic)

  • Blood orange slice for garnish

  • Fresh thyme sprig for garnish

  • Ice cubes

Method

  1. Fill a cocktail shaker with ice

  2. Add blood orange juice, pomegranate juice, elderflower cordial, lemon juice, and bitters

  3. Shake gently until well-chilled

  4. Strain into a crystal rocks glass over fresh ice

  5. Top with sparkling water and stir gently

  6. Garnish with a blood orange slice and a sprig of fresh thyme
